Top Secret Dough 

Our secret dough is made with low-gluten Caputo flour, fresh yeast, and imported sea salt. Mixed by hand on a marble surface, our crusts taste like freshly baked bread – ready within 90 seconds.

 

Enjoy your own delicious 13" pie with knife and fork or fold yours in half, “libretto” style like on the streets of Naples.

 

“The dough should be moved carefully, as if it were a baby,” says Massimo Di Porzio, general manager of the Verace Pizza Napoletana Association (VPN).

Artisan Ingredients

To be truly authentic we use only organic San Marzano tomatoes, picked at their peak ripeness for low acidity and a natural sweetness that caramelizes in intense heat. 

 

We import all our prosciutto, sopressata, and mortadella meats; Fontinella, Parmigiano-Reggiano, and Caciocavallo cheeses; and red and white wines from Campania.

 

True to tradition, our Mozzarella di Bufala is handmade from the delicious milk of water buffalo raised in the Campania region of southern Italy.

Local Freshness

Neapolitan pizza captures the healthy essence of simple and pure Italian food preparation. At Pizzeria Marzano, we are committed to using only the freshest and highest quality natural ingredients. 

 

We buy locally grown, in-season produce and fresh herbs direct from local farmers and purveyors whenever possible.

 

We roast all our fresh vegetables every day in our wood-fire oven. All dressings are handmade from scratch, and healthy salads are made to order.

ROMAN STYLE PIZZA FROM NONNA'S KITCHEN TO YOURS!

This Roman style Pizza Dough undergoes a lengthy fermentation process

(72-99 hours) to achieve its delicate structure. A crisp bottom crust topped by a light, airy dough, laced with delicate holes. It is crunchy yet light and bubbly, and known for it's digestibility. To master this technique we trained with Pizzaiolo from Rome, Italy to help perfect this recipe.
